2014 Knights Bridge Pont de Chevalier Sauvignon Blanc
While the 2014 Sauvignon Blanc grapes were harvested almost two weeks earlier than the harvest of 2013, the year was an ideal growing season. The second in the run of dry years, 2014 had long, dry days and cool nights to give our Sauvignon Blanc grapes every opportunity to reach optimal maturity.
To produce our well-known Pont de Chevalier style Estate Sauvignon Blanc, we picked the fruit in the cool, early morning hours on August 30th as dawn was breaking in our estate vineyards in Knights Valley. The fruit was whole-cluster pressed and the juice was hyper-oxidized to hasten the emergence of rich fruit aromas. After three days, the juice was racked clean to 80% stainless steel barrels and 20% French Oak for richness. The wine was barrel-aged for seven months prior to bottling and bottle-aged 13 months prior to release.
