2015 Knights Bridge Sauvignon Blanc Pont de Chevalier
Although the 2015 growing season proved to be one of the more difficult in recent history, the resulting fruit was some of the most exceptional in years. A dry, warm winter and an accelerated bud break were followed by a cool spring. While much needed rain arrived in May, it contributed to a small fruit set. Summer was consistently warm, allowing the small berries to slowly mature, gaining complexity and intensity.
Picked ripe to emphasize the richness and minerality of Sauvignon Blanc, we harvested later in the season during the very early morning hours of September 14. The fruit was whole cluster pressed and allowed to completely settle to avoid any bitterness in the finished wine. After fermentation, the wine was racked clean. We put 15% of the wine in new French oak barrels and aged it for six months to add a rich texture and mouth feel. The balance of the wine rested in stainless steel barrels. The wine enjoyed 12 months in bottle prior to release.
